2 in 1 Recipe: Raw Citric Sunset + Bitter Sweet Cleanser
Both these recipes were made on the spot with things I brought together naturally. I love having an array of different fruits and veggies in the fridge at all times (and I recommend you do, too) because it makes it easy and fun to come up with something different, as well as delicious ☺ Originally, this recipe was just going to be the 'Bitter Sweet' one I came up with as I brought out my ingredients, but since I blended half of the recipe first, I found it to be enticing all on its own as a Raw 'Citric Sunset' recipe. So after I blended the first half, I placed it into a mason jar (about 1 cup exactly), and was then left with 2 cups to work in the rest of the ingredients for what is now my 'Bitter Sweet'!
Raw 'Citric Sunset' Ingredients:
- 3 oranges
- 1 grapefruit
- 4 cups of pineapple
- Blend!
Now, with the above ingredients at 2 cups, I added the following ingredients:
- 1 carrot
- 2 cups of romaine lettuce
- 1 cup of kale

Raw Young Coconut Milk
So I've been really into young coconuts for the past two weeks (this isn't the first time), but it's definitely the first time I've decided to take it a step further and make my own raw coconut milk. I'm surprised as to how easy this really is and how many of us would benefit from doing this at home more often! Not to mention the amazing benefits of the young coconut; it's a win win! If you don't already know how to open a young coconut, you can learn how to do that right here.
Once you've opened up your young coconut and poured out your water (pour it into your blender already), all you have to do is scrape out the coconut meat from the inside (I used a wooden spoon but you can use a spatula or another method if you find your own). The texture of the meat feels really rubbery and smooth, and you can do all kinds of things with it like add it to a smoothie, eat it just so, or make this delicious milk. All you have to do is put the meat right into your blender along with your coconut water and blend away. Yes, it's that simple! From here on you can go ahead and have it plain or add some vanilla extract or anything else you wish. I kept it plain and put my jar into my fridge to cool and I also enjoyed a raw 'cereal' with bananas (very good). Hope I've been of help for this and I hope you'll try it out and enjoy it, too! x
Kale Cleanser Green Juice
Mmmm this one came out really good and refreshing! I added ingredients as I went along and ended up with a juice I'm quite pleased with. It's tart, nutritious, easy to make, and of course GREEN.
Ingredients
- 4 to 5 leafs of green kale
- 1 cup of curly parsley
- 2 lemons
- 3 mandarins
- 1 vine ripe tomato
- a tiny mince of raw or a sprinkle of granulated store bought organic garlic
- A pinch of cayenne
- 1 to 2 cups of water
After I blended it I poured the juice into a large mason jar, rinsed my vitamix blender, brought out my colander and placed it on top of the blender and strained the ingredients through and through until I got a nice, juicy texture. And voilà! You have yourself a delicious and very cleansing juice that you can drink at any time of day or thoroughly enjoy as a meal replacement! x

Watermelon Basil Splash Juice
Hi everyone! It's one of those blazing hot days here in the sunshine state and I thought: 'what better than to make something refreshing, light, and sweet?' In my fridge I found three wonderful things that suddenly seemed to belong together; watermelons, basil, and strawberries! Not only does this sound refreshing, it tastes it too. I'd like to *someday soon* take a huge mason jar of this recipe to the beach and enjoy it under the summer sun. In the picture above, I have placed bananas along with all of my other ingredients. I was thinking of adding them to the recipe but as I went along tasting and blending, I realized they weren't necessary at all! So, the bananas are now an optional ingredient.
Ingredients:
- 2 cups of fresh watermelon
- About 5 leafs of basil
- 3 leafs of swiss rainbow chard (de-stemmed)
- 2 cups of spinach
- 6 to 7 strawberries
- 4 pitted dates
- 1/4 a cup of light canned coconut milk
- About a teaspoon of organic coarsely ground flax seed
- 8 oz of water
- Ice!
I hope you enjoy this delicious juice as much as I do! Comments and feedback are always more than welcome. Happy Saturday! x

Kale with Chard Herb Infused Salad
Above is one of my 'signature' salads that I've made over and over again for some time now because it's that good! One thing you should know is I personally love using herbs in my salads; particularly parsley, cilantro, and dill. A lot of people might not like herbs in their salads, or feel that they don't belong there... but I can't get enough of them and I encourage you all to try this out the way it is! Behind the ingredients I have what I used to dress the salad (soy free vegenaise and balsamic vinegar), both of which are not raw (but are vegan), so please feel free to dress it any way you like.
Ingredients:
- Half a head of green kale
- About 1 cup of curly parsley
- 2 leafs of swiss chard
- 1/2 of 1 Hass avocado
- About 1 cup of cherry tomatoes
- Half a lemon
- Diced white onion
- A dash of cilantro on top
and that's it! This is a huge salad that you can choose to either enjoy alone (don't feel guilty, I do it all the time!) or share with a loved one, a family member, or a friend. And guess what? It only takes 5 to 10 minutes to make and it is super delicious, crunchy, healthy, and GREEN! Enjoy x
Peaches and Greens
Hello everyone! I wanted to make a special smoothie today with one of my all time favourite fruits: peaches! I brought together 3 ingredients that I thought would taste wonderful with it: young coconut, spinach, and almond milk. This recipe came out pretty delicious, but if you are not one for coconut I would opt for water instead. The most overpowering elements of the smoothie are the sweet young coconut and the delicious swirl of tartness from the peaches the entire way through.
Ingredients:
- 2-3 cups of spinach
- 4-5 peaches
- 1 cup of young coconut*
- 1 cup of almond milk*
- Lots of ice!
*Store bought almond milk is not raw vegan. But, you can make your own raw almond milk at home and it is fairly easy; click here to learn how.
This has been the simplest recipe I've made thus far ingredient wise. It's really delicious as a morning smoothie, or for any time of day that you might be feeling... peachy ☺ Enjoy! x

Very Berry Red Kale Smoothie
I was inspired to make a purple smoothie yesterday evening, so I gathered what I thought would look and taste amazing together. I discovered some frozen organic cherries in my freezer that I had no idea were there (which made me very happy since they are currently not in season), some blueberries, strawberries, and of course the rest of my red kale. This made for a really sweet, thick, and delicious smoothie with beautiful colour. If you're one for berries, this is the smoothie for you!
Ingredients:
- 6 cups of Red Kale (yes, 6! Kale is naturally a very fluffy, crunchy green- so when you measure it, it actually makes for a lot of cups. I used about half a head of Red Kale for this amount)
- 1 cup of blueberries
- 1/4 a cup of organic frozen cherries (you can find them in the frozen fruit/veggie aisle)
- 1/4 a cup of light canned coconut milk
- 4 strawberries
- A capful of vanilla extract* for additional sweetness
- 2 1/2 cups of H20
- Lots of ice!
*Optional ingredient
As you can see, this is a pretty simple recipe. It serves about 4 to 5 cups and it took me anywhere from 5-10 minutes to make. Great for, in my opinion, any time of day that you may be craving something sweet and/or different. Enjoy! x

Raw Tomato Soup
Hello everyone! Happy Sunday to you all. The weekend is officially coming to an end, and we are almost at the last day of the month, meaning it's almost May, which is inspiring me more and more to make lovely spring-derived recipes for each and every one of you. Today I was inspired to make a beautiful raw tomato soup, and to my surprise it came out not only delicious, but also very gazpacho-esque, which if you don't already know is an extremely refreshing soup from Spain. While I was compiling the ingredients for this recipe, I had no idea what it would come out like. I basically go by my instincts and what I know tastes good together, or what I think could marry well. As usual, I was pleasantly surprised with the results, and so was my family. This is a great soup to share with friends, a loved one, family members etc. I'd also recommend leaving it in the fridge to cool for awhile, or adding ice to the blender if you want it instantly! It's very filling (my tummy is sooo happy right now) and also very light, and I hope you'll try it and enjoy it as much as I did!
Ingredients:
- About 2 cups of organic grape tomatoes
- 2 vine ripe tomatoes
- A sliver of avocado
- Half a handful of fresh organic basil
- 6-7 stocks of celery
- A tiny dollop of soy free vegenaise*
- 1 lemon
- 2 sticks of organic hearts of palm
- 8 oz of H20

Grassy Youth Juice
This green mushy looking thing above tasted sooo healthy and delicious, and I made so much of it that I have plenty leftover. This is a great meal replacement, and also wonderful for on-the-go. I made about 3 to 4 servings worth and stored away what I didn't finish in a mason jar for later. I put a heavy amount of leafy greens in it which made the consistency more JUICE-like (which I heavily enjoyed!) and I hope you will, too. One thing I highly recommend is a high-powered blender such as a Vitamix because it really makes the ingredients smooth out, so you don't get that seediness most of us don't like.
Ingredients:
- 2 leafs of Rainbow Chard (de-stemmed)
- Half a head of Red Kale
- About a handful of Curly Parsley
- Half a Lemon (pick out those seeds)
- 1 yellow pear
- 2 strawberries
- 1 mini chiquita banana
- A sprinkle of Wheat Grass powder*
- Lots of water!!! (I put about 1 and a 1/2 bottles worth)
- And lots of ice! (if you want it to be cold)

Vegan Eatery Introduction
Hi everyone! Welcome to the official Vegan Eatery blog where I, Lauren Suarez, will be bringing you 100% original recipes of all kinds from salads, soups, juices, and smoothies! The majority of all of my recipes will be completely raw- those that are not completely raw will be specified. My goal with the Vegan Eatery is to inspire each and every one of you to be healthier, and in conjunction with being healthier, I believe this will help you in leading more fulfilling and inspiring lives. I truly believe eating a raw meal at least once a day makes a HUGE difference, not only in yourself (inside AND out), but in your approach to the world we live in. I hope I can transpire my inspiration into your routines, and by doing that it will inspire me even more to keep on giving you the motivation we deserve and the soon to come beautiful recipes.
Before I close my first post I'd like to give you a little background information on my diet. I've been a vegetarian now since I was 15 years old. The obvious reasons are all cliché because you've heard them all before, but overtime being a vegetarian means something different, and the results are not only beneficial for yourself, they're also beneficial to the environment. No, I do not look at a slab of meat and crave it. In fact, I look at a slab of meat and see and feel nothing at all (besides the every-now-and-then guilt for the person consuming it). I am now 22 years old (23 in May) and I've been through many ups and downs with my dieting. For example, I went 100% vegan in January of 2012, stayed that way for 6 months, decided to go 100% raw, stayed that way for nearly one month, and then went back to eating cheese. Throughout my years of vegetarianism, I've had the all but too common slip ups that most of us have, and I'm here to tell you right now that THAT IS O.K. and that this isn't something easy. Rewarding? Absolutely. Easy? Not in the least. There are many reasons why this is so, and one of the first I'm going to cover is a person's readiness to change. I think the best way to start eating better, or to become vegetarian/vegan/raw-vegan is simply by easing yourself into the process. In this day and age, instant gratification is what we aim for, and believe me I am a victim of that just as much as the next person. I'm one to be majorly rash and impulsive with my decisions based on dieting, and my experiences only show the obvious: it takes time and effort to commit, as well as endless research. When I jumped into veganism, I went on a rampage that only lead me right back where I started 6 months later. I'm not saying you can't do it! Some people work better that way and truly can transform their diets at the drop of a hat with no issues whatsoever. But realistically speaking, with all the common day-to-day life distractions at every corner, it's very very easy for the majority of people to fall back. I'm here to help you help me help you etc. So, to put it plainly, my goal here is to not only lead myself closer to a more raw vegan lifestyle, but to also help you get there with me (if you so wish). Just a simple recipe a day can make the difference, and when you start to reap the benefits of those differences, you won't want to turn away from them.
So with that, I hope you'll enjoy everything I have to offer. Please feel free to leave comments below with any questions you may have. XX
