2 in 1 Recipe: Raw Citric Sunset + Bitter Sweet Cleanser

Both these recipes were made on the spot with things I brought together naturally. I love having an array of different fruits and veggies in the fridge at all times (and I recommend you do, too) because it makes it easy and fun to come up with something different, as well as delicious ☺ Originally, this recipe was just going to be the 'Bitter Sweet' one I came up with as I brought out my ingredients, but since I blended half of the recipe first, I found it to be enticing all on its own as a Raw 'Citric Sunset' recipe. So after I blended the first half, I placed it into a mason jar (about 1 cup exactly), and was then left with 2 cups to work in the rest of the ingredients for what is now my 'Bitter Sweet'!

Raw 'Citric Sunset' Ingredients:
  1. 3 oranges
  2. 1 grapefruit
  3. 4 cups of pineapple
  4. Blend!
You can add ice to this if you'd like, or even take it to another level and put it into a food processor and make a delicious ice cream/sorbet! It's a very tart, versatile recipe and I felt it needed to have its own accord for being so delicious.

Now, with the above ingredients at 2 cups, I added the following ingredients:
  1. 1 carrot
  2. 2 cups of romaine lettuce
  3. 1 cup of kale
and that's it! Both these recipes ended up exceeding my expectations and I can't wait to enjoy them under the summer sun later on today. Please feel free to leave comments, feedback, or questions of any kind x

Raw Young Coconut Milk

So I've been really into young coconuts for the past two weeks (this isn't the first time), but it's definitely the first time I've decided to take it a step further and make my own raw coconut milk. I'm surprised as to how easy this really is and how many of us would benefit from doing this at home more often! Not to mention the amazing benefits of the young coconut; it's a win win! If you don't already know how to open a young coconut, you can learn how to do that right here.

Once you've opened up your young coconut and poured out your water (pour it into your blender already), all you have to do is scrape out the coconut meat from the inside (I used a wooden spoon but you can use a spatula or another method if you find your own). The texture of the meat feels really rubbery and smooth, and you can do all kinds of things with it like add it to a smoothie, eat it just so, or make this delicious milk. All you have to do is put the meat right into your blender along with your coconut water and blend away. Yes, it's that simple! From here on you can go ahead and have it plain or add some vanilla extract or anything else you wish. I kept it plain and put my jar into my fridge to cool and I also enjoyed a raw 'cereal' with bananas (very good). Hope I've been of help for this and I hope you'll try it out and enjoy it, too! x

Kale Cleanser Green Juice

Mmmm this one came out really good and refreshing! I added ingredients as I went along and ended up with a juice I'm quite pleased with. It's tart, nutritious, easy to make, and of course GREEN

Ingredients
  1. 4 to 5 leafs of green kale
  2. 1 cup of curly parsley
  3. 2 lemons
  4. 3 mandarins
  5. 1 vine ripe tomato
  6. a tiny mince of raw or a sprinkle of granulated store bought organic garlic
  7. A pinch of cayenne
  8. 1 to 2 cups of water

After I blended it I poured the juice into a large mason jar, rinsed my vitamix blender, brought out my colander and placed it on top of the blender and strained the ingredients through and through until I got a nice, juicy texture. And voilĂ ! You have yourself a delicious and very cleansing juice that you can drink at any time of day or thoroughly enjoy as a meal replacement! x

Watermelon Basil Splash Juice

Hi everyone! It's one of those blazing hot days here in the sunshine state and I thought: 'what better than to make something refreshing, light, and sweet?' In my fridge I found three wonderful things that suddenly seemed to belong together; watermelons, basil, and strawberries! Not only does this sound refreshing, it tastes it too. I'd like to *someday soon* take a huge mason jar of this recipe to the beach and enjoy it under the summer sun. In the picture above, I have placed bananas along with all of my other ingredients. I was thinking of adding them to the recipe but as I went along tasting and blending, I realized they weren't necessary at all! So, the bananas are now an optional ingredient.

Ingredients:
  1. 2 cups of fresh watermelon
  2. About 5 leafs of basil
  3. 3 leafs of swiss rainbow chard (de-stemmed)
  4. 2 cups of spinach
  5. 6 to 7 strawberries
  6. 4 pitted dates
  7. 1/4 a cup of light canned coconut milk
  8. About a teaspoon of organic coarsely ground flax seed
  9. 8 oz of water
  10. Ice!

I hope you enjoy this delicious juice as much as I do! Comments and feedback are always more than welcome. Happy Saturday! x

Kale with Chard Herb Infused Salad

Above is one of my 'signature' salads that I've made over and over again for some time now because it's that good! One thing you should know is I personally love using herbs in my salads; particularly parsley, cilantro, and dill. A lot of people might not like herbs in their salads, or feel that they don't belong there... but I can't get enough of them and I encourage you all to try this out the way it is! Behind the ingredients I have what I used to dress the salad (soy free vegenaise and balsamic vinegar), both of which are not raw (but are vegan), so please feel free to dress it any way you like.

Ingredients:
  1. Half a head of green kale
  2. About 1 cup of curly parsley
  3. 2 leafs of swiss chard
  4. 1/2 of 1 Hass avocado
  5. About 1 cup of cherry tomatoes
  6. Half a lemon
  7. Diced white onion
  8. A dash of cilantro on top

and that's it! This is a huge salad that you can choose to either enjoy alone (don't feel guilty, I do it all the time!) or share with a loved one, a family member, or a friend. And guess what? It only takes 5 to 10 minutes to make and it is super delicious, crunchy, healthy, and GREEN! Enjoy x

Peaches and Greens

Hello everyone! I wanted to make a special smoothie today with one of my all time favourite fruits: peaches! I brought together 3 ingredients that I thought would taste wonderful with it: young coconut, spinach, and almond milk. This recipe came out pretty delicious, but if you are not one for coconut I would opt for water instead. The most overpowering elements of the smoothie are the sweet young coconut and the delicious swirl of tartness from the peaches the entire way through.

Ingredients:

  1. 2-3 cups of spinach
  2. 4-5 peaches
  3. 1 cup of young coconut*
  4. 1 cup of almond milk*
  5. Lots of ice!
*Optional ingredient

*Store bought almond milk is not raw vegan. But, you can make your own raw almond milk at home and it is fairly easy; click here to learn how.

This has been the simplest recipe I've made thus far ingredient wise. It's really delicious as a morning smoothie, or for any time of day that you might be feeling... peachy ☺ Enjoy! x
